Summary:

The Prep Cook assists the cooks in the preparation of menu items.  The Prep Cook must be able to work quickly and efficiently to keep up with the required production levels.  The Prep Cook will anticipate and exceed customers’ needs and expectations.

Essential Duties & Responsibilities:

  • Maintains a professional and welcoming attitude while at work.
  • Practices company food quality principles.
  • Batch, process and portion prep according to production chart.
  • Stores food in designated containers and storage areas to prevent spoilage.
  • Prepares a variety of food.
  • Washes, peels, and cuts various foods.
  • Weighs or measures ingredients according to standards outlined in the recipes.
  • Completes all opening and closing side work related to job duties.
  • Inspects and maintains cleanliness of food preparation areas, such as equipment, and work surfaces to ensure safe and sanitary food-handling practices.
  • Ensures freshness of food and ingredients by checking for quality, keeping track of shelf life, and rotating stock.

Qualifications:

Summary:

The Cashier is responsible for greeting our customers, taking orders over the phone and in person, and answering any questions the customers may have. Cashiers are responsible for processing customer payments through the Point of Sales (POS) system.  The Cashier will anticipate customers’ needs and exceed expectations.

Essential Duties & Responsibilities:

  • Must maintain a professional and welcoming attitude while at work.
  • Practice the company service principles.
  • Greet all guests when they enter the restaurant.
  • Effectively communicate with guests regarding Mambo menu offerings, limited time offers and daily specials.

Summary:

The Dishwasher is responsible for maintaining cleanliness and sanitation standards for glassware, tableware, cooking utensils, etc., using machine and manual cleaning methods. This position also ensures the dishwashing area is maintained clean, safe, and sanitary.

Essential Duties & Responsibilities:

  • Must maintain a professional and welcoming attitude while at work.
  • Sorts and rinses dirty dishes, glass, tableware and other cooking utensils.
  • Empties and cleans all trash receptacles.
  • Cleans and maintains parking lot and dumpster area.
  • Cleans and maintains all dish, utensil, and food storage areas.
  • Follows sanitation policies at all times.
  • Stocks supplies as necessary.
  • Assists with bussing tables in dining room when needed.
  • Puts away all food truck deliveries in designated area, following all food safety standards.
  • Cleans up spills or broken glassware immediately.
  • Reports any sanitation or janitorial issues to manager on duty.
  • Follows and signs the checklist every 2 hours.

Summary:

The primary responsibility of a Busser is to ensure the cleanliness of the restaurant and its perimeter.  The busser is responsible for maintaining the cleanliness of the dining room by clearing tables and keeping the floors clean.  The Busser will anticipate customers’ needs and exceed expectations.

Essential Duties & Responsibilities:

  • Practice the company service principles.
  • Sets up and/or breakdown beverage station and condiment area.
  • Sorts dishes, glasses, and silverware.
  • Assists cashier and bartenders in restocking their areas.
  • Cleans and maintains cleanliness of bathrooms throughout shift.
  • Sweeps and mops floor areas inside restaurant and exterior of the building, including parking lot, walkways, and patios, throughout the shift.
  • Cleans windows in the restaurant.
  • Wipes down tables, chairs, high chairs, and booster seats before and after the shift and as needed throughout the shift.
